Oak Maturation: French oak barriques between one and five years old. Monthly batonnage on lees. Nine months contact.
Using only free run juice, which was inoculated with Burgundian yeast strains. Partial barrel & malolactic fermentation. Lees stirring and maturation over a nine month period.
The vintage was of very good quality. Reliable winter and early spring rainfalls gave way to a dry growing season interspersed with regular, adequate rainfalls. Warm conditions in February led to excellent ripening conditions and slightly earlier harvest.
Aromas of peach and melon with a subtle spice lift. Undertones of cashew are evident from extended lees contact and careful oak selection.
The Palate also shows rich peach and pear fruit with spicy undertones. Extended lees contact in French Oak barriques adds dimension and length to the wine providing great texture, intense flavour and a gratifying creamy dry finish
